Healthy Chicken Fajitas

Quick and Healthy Chicken Fajitas


Limit or eliminate cheese and sour cream for healthiest version
2 medium green or red bell peppers or combination
2 medium onions
2 garlic cloves, minced
1 1/2 lbs boneless, skinless chicken breasts
2 Tblsp. Chipotle seasoning or rub
1 lime (optional)
12 (6"-7") tortillas
4 oz mild cheddar cheese (optional)
Optional toppings: sour cream, salsa, and guacamole

DIRECTIONS:


Slice bell peppers and onions into rings and then cut them in half. Place the vegetables in a mircrowave safe casserole dish with a lid. Place minced garlic on top of the vegetables. Juice lime in medium bowl. Add chipotle seasoning or rub and chicken and turn to coat. (If eliminating lime, just sprinkle chipotle seasoning or rub on chicken on all sides. Place the seasoned chicken over the vegetables in the microwave safe casserole dish and cover.


Microwave, covered on high for 12 - 15 minutes or until the internal temperature reaches 165 degrees F in the thickest part of the chicken and the juices run clear.
Transfer chicken to a cutting board and cut into small pieces. Return to the dish and combine it with the vegetables. Wrap the tortillas with a damp paper towel and microwave them on high for 30 seconds, or until warm. To serve, spoon the chicken and vegetable mixture onto the centers of the tortillas. Top with any additional toppings.

Yield 6 servings of 2 fajitas.
